The museum is an introduction; buy from the artisans: Dominique Persoone (the world-famous, modern one), The Chocolate Line (bold), and Van den Bos or Depondt (traditional and excellent) โ all in the centre. Avoid the cheap tourist shops near the Markt bearing the same "Belgian chocolate" label. Fresh pralines are bought by weight and eaten within days.

Choco-Story is Bruges' chocolate museum, in a fifteenth-century wine tavern with stone columns: it tells cocoa's four-thousand-year journey from the bitter drink of the Maya and Aztecs, to the Spanish court, to the invention of the Belgian praline and Bruges' own industry with dozens of artisan chocolate shops in its lanes today โ and Belgium's strict legal standards for what may be called chocolate. Most fun: live demonstrations where a chocolatier makes pralines before you and explains tempering and filling, with tasting โ plus giant chocolate sculptures, a collection of historical tools, and a children's section with a treasure hunt. A light family visit ending in the shop. In the old-town centre near the Burg โ a delicious refuge in rain, with a combined ticket for the same group's neighbouring Fries and Lamp museums.
