**Banitsa**, a filo pastry with white cheese and egg, the basic Bulgarian breakfast sold in every bakery. **Shopska salad**, tomato and cucumber under grated white cheese. **Kiselo mlyako**, Bulgarian yoghurt โ internationally known because the bacterium responsible was identified here and named after the country. **Tarator**, a cold yoghurt soup with cucumber, garlic and dill, excellent in summer. Grilled meats are everywhere, and pork is in many sausages โ ask. Prices in Bulgaria are among the lowest in the European Union.

The Halite โ the Central Market Hall โ is a building of 1911 with a neo-Renaissance front and a clock tower, standing on Maria Luiza boulevard at the heart of the area where Sofia's religions meet. That position is half the story. Within a single block of no more than two hundred metres stand the Orthodox **Sveta Nedelya church**, the working Ottoman **Banya Bashi mosque**, the Ashkenazi **Sofia Synagogue** and the Catholic **St Joseph's Cathedral** โ with the market in the middle. People in Sofia call this spot the square of tolerance, and there are few like it in Europe. Inside the hall are three floors: groceries, cheese and meat below, prepared-food stalls, and shops above. **It is a working market rather than a sight**, and its prices are the city's. Beneath it a stretch of Roman wall is exposed behind glass, found during construction. **Entry is free.**
